Heat up a pan, add coconut oil and allow to get hot. Add onions and allow to fry for 3 minutes. Add pepper, tomatoes, red bell pepper, ginger, garlic, and allow to fry for 3 minutes.

Add coconut milk, water, 2 MAGGI Signature Jollof then bring to boil. Add rice and stir, allow to cook for 20 minutes. Add the seafood mix, big prawns. Stir and cook for 5 minutes

Add green bell pepper and diced carrot to the rice. Fine cut the lemon grass and add to the rice. Let simmer for 5 minutes.
